    Autumn Chowder

This is the ultimate fall comfort food! A classic from my grandma, enjoy this thick, creamy soup with fresh homemade bread and tossed salad. While some soups are the type where you can just dump in whatever leftovers you have in the fridge, I’d recommend sticking as close to the recipe as possible (including the amount of bacon) for this one. It takes about an hour to make from start to finish, and can serve 6-7. 1 1/2 lb. bacon, chopped1 c. chopped onions1 c. chopped carrots2 1/2 c. diced potatoes1 c. water2 chicken bouillon cubes2 16 oz. cans corn, drained3 c. milk3 TBS flour3 c. shredded sharp Cheddar cheeseCook…

Feel free to pass this article along to any gluten-free friends you think might find it helpful, and to share any tips you have if you’re also in the gluten-free cooking club. Thanks so much for taking the time to share, Emily! Tips and Ideas From My First Year Last month was the one-year mark of my gluten-free cooking adventure! It’s not one I ever planned on, but some health challenges for one of our children led us down the gluten-free, low inflammation…

Hey friends! Summer is here, and I’m so happy about that. I love all the fun that comes right along with the season, and I also enjoy getting to cook with fresh fruits and vegetables. That being said, I find it a bit more challenging to cook during the summer due to the heat and busyness. I’ve had fun finding meal ideas for you to make your summer cooking easier. Some are ideas we already use, while others are new that I’d enjoy trying sometime. Recipes are not included, (although I have linked a few) so you can go on your own treasure hunt or use your own recipes. Be…

    Summer Review and Favorites

Hello friends! Wow, what a summer! Jam-packed with activity and good memories. I enjoyed lovely vacation time, read some great books, and in spite of the heat, enjoyed trying several new recipes. As a little disclaimer before you read on, I’m currently not affiliated with any company, so all the recommendations/links below are solely from my desire to get good resources into your hands. 😊 Summertime Activities Our first trip was to Green Lakes State Park, south of Syracuse, NY. It’s so beautiful there, and yes, the glacial lakes are actually green! The water is a clear aqua, like you see in pictures of the Caribbean. (Unfortunately, the green color…

    Nonny’s Potato Salad

Hey there! What goes along with hot dogs, watermelon, and lemonade for a summer picnic? Or maybe a barbecue? In my book, it’s potato salad. This was my grandma’s recipe, passed down to my mom, and now I love making it, too. This is more of a chunky potato salad, although you can cook the potatoes a little longer if you prefer it to be softer. Enjoy! Serves 7-8. 8 large white or russet potatoes, washed and cut into quarters (you can peel them if you prefer, but we don’t mind a little potato skin, plus much of it will fall off after the potatoes are cooked) 2 hard-boiled eggs,…

    Banana Berry Smoothie

Yay for summer! This smoothie is delicious, filling, and so refreshing on a hot day! ‘Tis the season for picking berries; there’s just something so “summery” about getting out in the berry patch! Enjoy this smoothie for breakfast or as a power snack in the afternoon. It’s also healthy—the only “added” sugar is in the orange juice, which you can totally skip if you’d like (just add some water for extra liquid). If you’ve never used kefir before, it’s a natural, probiotic drink that should be available at your local grocery store. Serves 2. 2 bananas, sliced—preferably fresh, but you can use frozen 1 c. blackberries—fresh or frozen 1/2 c.…

    Spring Update and Favorites

Hello my friends! May has been absolutely gorgeous here—summer came early this year, which is fine with me! This month makes me realize how grateful I am for God’s creation of color. The rich green of the grass and trees, white lilacs (my favorite), the vibrant blue sky; our God loves beauty and that is so evident in His creation. We’re looking forward to a number of camping trips this summer—I’m planning to share some photos and stories in each month’s favorites and update! This past week was our church’s missions conference. The preaching was so good, the fellowship is always fun, and it was a blessing to hear from…

    Chocolate Eclair Cake

Hey there everyone! This is one of our favorite desserts to make for company. It’s so easy, it’s delicious, and it’s no-bake (which makes it great for summer!). This cake does need to set in the refrigerator for awhile, though, so be sure to make it the night before you plan to serve it. Enjoy! 2-3 sleeves graham crackers 2 boxes vanilla pudding 2 c. milk 1 tub whipped topping 1 can chocolate frosting (you could make your own ganache topping instead, if desired) In a large bowl, combine milk, whipped topping, and pudding mixes. Whisk until smooth. Place one layer of graham crackers in a 9″x13″ pan. Pour half…

    Onion-Crusted Chicken

with air-fryer baked potatoes Tender, juicy chicken with a crispy covering of French fried onions–this is a family favorite! It’s so flavorful and–best of all–it is very quick and easy to make, so this recipe is ideal for a busy weeknight dinner. And my absolute favorite way to do baked potatoes (which pair really well with this meal) is in the air fryer. They come out perfectly crisp on the outside and soft and fluffy on the inside. Alright, on to the details! Onion-Crusted Chicken 3 or 4 chicken breasts, thawed, cut into 10-12 tenders 3/4 c. mayonnaise 1 6 oz. can (plus another 1/2 6 oz. can) french fried…
