Chocolate Eclair Cake
Hey there everyone! This is one of our favorite desserts to make for company. It’s so easy, it’s delicious, and it’s no-bake (which makes it great for summer!). This cake does need to set in the refrigerator for awhile, though, so be sure to make it the night before you plan to serve it. Enjoy!
2-3 sleeves graham crackers
2 boxes vanilla pudding
2 c. milk
1 tub whipped topping
1 can chocolate frosting (you could make your own ganache topping instead, if desired)
In a large bowl, combine milk, whipped topping, and pudding mixes. Whisk until smooth. Place one layer of graham crackers in a 9″x13″ pan. Pour half of the milk mixture in. Top with another layer of crackers, then the other half of the mixture. Add one final layer of crackers. Remove foil from the frosting can and microwave until pourable (usually between 30 and 45 seconds). Pour over graham crackers and spread evenly. Refrigerate at least overnight before serving.
Variation: This also tastes delicious using chocolate pudding instead of vanilla! 😊
